(also pisang batu, ‘stone banana’). A cooking banana, and always sold unripe for use in (for example) Rujak. It is chopped up, skin and all (in any case it would be hard to remove the skin from the unripe fruit), along with the many small crunchy seeds inside it. It gives the Rujak an interesting texture and a pleasant, nutty flavour.
