A drop lid or otoshibuta is an essential part of the Japanese kitchen arsenal. Often made from wood, the round lid is slightly smaller than the diameter of the pan you’re using and floats on top of the simmering foods. You can make your own using parchment paper. I’ve also had success using a food-safe silicon suction lid. It’s great for even cooking and for cooking with minimal liquid.
