Also known in English as rape and in Italian as broccoletti di rapa, cime di rapa, and rapini, this deep green leafy vegetable is related to the turnip. It has small flowering buds and ruffly green leaves atop long stalks. It is considered a bitter green, and is often, although not always, braised or parboiled for use in other recipes.
