Kaffir lime leaves

Another star ingredient of Thai cooking, these leaves are added to soups or broths to give them a lovely citrus note. The dried version can be found in most supermarkets in the spice aisle. The fresh ones are a gorgeous deep green colour with a beautiful gloss to them, but you may have to hunt more for these. If you can’t find either, use a bay leaf and a squeeze of lime juice instead.
