Contrary to what you might think, a good, sharp knife can prevent you from injuring yourself. It’s more likely to slice through what you are cutting than to run down the sides of it and hit your hand. Of course, injuries can still happen, but keeping you knife razor-sharp while remaining cautious can minimise kitchen-related mishaps. If you’re looking for a good all-purpose knife, get a chef’s knife. If you are willing to get several knives, a paring knife and a serrated knife make good additions to your collection. I also recommend using a knife sharpener at least once a month, or whenever you notice the blade is getting dull.
