Literally “grey-hair long onion,” shiraga negi is the white part of Japanese long onion (naganegi), cut into very thin strips, like human hair. The white stem of the onion is first cut into 2-inch lengths. Each piece is slit open lengthwise, and the inner, tubular part of the onion is removed. The remaining thin layers of onion are cut into narrow strips. These strips are then soaked in ice water to make them crisp and a little curly. Shiraga negi make a very refreshing and attractive garnish.
