This city used to be the capital of Japan. It is well known for various types of pickles, such as senmaizuke, shibazuke and suguki, and fresh tofu and other tofu products, such as fried tofu and ganmodoki. Other dishes to note are kappo ryori (a traditional prix-fixe menu/fine dining style where the chef cooks right in front of you), wagashi (traditional Japanese sweets), saba (mackerel) sushi, and the especially famous saikyo miso, which is an extra-sweet white miso. It is also one of the biggest green tea farming districts.
