Made from soybeans, tofu is known as a healthy food as it is high in protein and iron and low in calories. There are several varieties of tofu typically available. The soft (silken) tofu is eaten raw or in miso soup. The firm (cotton) tofu is best for frying. Thick deep-fried tofu is referred to as atsuage; thin deep-fried tofu is called aburaage. Deep-fried tofu freezes well and is a great meat substitute.

Once opened, tofu needs to be refrigerated. It should be covered with water and consumed within 1–2 days.
