Ginger is a very common ingredient in Japanese dishes. It is used in recipes for pickles, stews, sauces and dressings as well as sweets and puddings. It is often finely grated and used as a garnish. Ginger is also used to off set the strong odours of certain fish and meat. Try to use fresh-looking ginger rather than dried or older ginger.

A Japanese grater, called an oroshiki or oroshigane, is a useful tool. They are available in Japanese grocery stores or can be ordered online.
