Shiitakes are nutritious mushrooms that are high in vitamin B and minerals. Shiitake mushrooms add an umami flavour to dishes when used in either the fresh or dried form. Fresh shiitake mushrooms are used in simmered dishes or for tempura. Dried shiitake mushrooms must be soaked in water to rehydrate them. They are commonly used to make vegetarian dashi. Dried shiitake mushrooms can also be used in place of fresh shiitake mushrooms once rehydrated.
