Katsuobushi is dried, fermented and smoked skipjack tuna that is often sold in the form of shaved flakes in a plastic bag. This is one of the principal ingredients in dashi stock. It is also used to sprinkle on various dishes, such as okonomiyaki (savoury pancakes), salad, tofu and even on plain, steamed rice. It adds instant umami to dishes.
