This is a starchy rice and is stickier than most other rice varieties, which makes it easier to eat with chopsticks. There are plenty of rice brands and makers in Japan. It is worth trying different brands or types of rice, especially when the newly harvested rice (shinmai) is available.

Short-grain brown rice (genmai) is also available and is a healthier option. Just make sure you choose an organic variety since unpolished rice tends to retain more pesticides. Cooking brown rice requires extra soaking time due to the extra layer of bran.
