Soba noodles are another popular type of noodle. This grey/light-brown, thin noodle is traditionally made from buckwheat flour. However, it can often be mixed with wheat flour, so check the packet if you prefer 100 per cent buckwheat soba noodles. Outside Japan, soba noodles are mostly sold in dried form.
