Sugar is frequently used in Japanese cooking. Light brown, granulated or caster (superfine) sugar are all regularly used. Kurozato (black sugar) is also used for traditional sweets, wagashi making and sugar syrups. The flavour of kurozato is similar to molasses, but it is made from cane sugar.
