This is also sometimes called yellow miso or shinshu miso to distinguish it from the sweeter white miso.

Main ingredients: rice and soybeans

Appearance: actually not ‘white’ in colour, rather yellow to pale brown

Flavour: mild, gentle sweetness, with a slightly salty note

Suitable for: fish and vegetable marinades, soups and sauces

Fermentation: over 6 months
