Main ingredients: brown rice and soybeans

Appearance: dark brown

Flavour: strong, chocolatey

Suitable for: miso soup, sauces, marinades and dressings

Fermentation: minimum of 2 years

There are also various types of miso made from other beans, such as adzuki or chickpeas, which are not as common in Japan. Awase miso is a mixed miso that is usually mild in taste.
