In Japan, when fresh, young green beans in their hairy pods start appearing in the market, the people know summer has arrived. These beans are called eda-mame meaning branch beans as they are often sold still on the stalks. They are becoming popular outside Japan now, mainly through Japanese restaurants, and are available from summer to early autumn at some Japanese supermarkets.
Fresh young green beans in the pod are delicious boiled and are often served whole as hors d’oeuvres. Keep refrigerated and use within a few days.
