The name shirataki means white waterfall. It is made from the konnyaku plant in the same way as konnyaku but only as a thin white noodle-like filament. Shirataki is sold in an inflated plastic bag filled with water or in cans and is available from Asian supermarkets. It is mainly used for hotpots, especially sukiyaki (table-top cooked beef and vegetables), and for salad dishes. Par-boil and roughly cut the long noodles before use.
