Since ancient times pork has been eaten, even during the period when meat was banned, and it remains popular today. It is thinly sliced, pan-fried and mixed with grated fresh root ginger and shoyu, or else chopped and used as a flavouring in vegetable dishes. Long-simmered pork is delicious with ramen.
