This is an essential piece of equipment for the Japanese household and has already started appearing in Western kitchens. It is a round or square nonstick metal griddle with a rim about 5cm/2in deep and an electric heating device underneath. There are many types and makes, but the most popular is the round one, about 40cm/16in in diameter, with a see-through glass lid. The griddle is placed in the centre of the table surrounded by prepared fresh vegetables, meat or fish and shellfish, and diners help themselves. It’s an easy family meal, suitable for busy people. Some deeper griddles can be used to roast a whole chicken or other meat.
