This Yemenite seasoning paste is one of Israel’s most popular spice mixtures. It may be red, based on chillies, garlic, spices, coriander (cilantro) and parsley, or it may be green, with more herbs and fewer or no tomatoes. Zchug is eaten as a dip with bread or as a relish or sauce.
