Dried beans and legumes, such as fava, garbanzo (chickpea), and kidney, need to be soaked before cooking. The longer they are soaked, the less they need to be cooked. I prefer to soak my beans overnight. Place the dried beans in a large container, cover with water 2 in (5 cm) above the beans and allow to soak overnight. Rinse and drain.
