In Iran, kashk is used in cooking as a high-protein, fat-free replacement for cream. Traditionally, kashk is sold dried and then reconstituted in water before use. These days it is also available fresh in liquid form and stored in the fridge. I recommend using it in this form, available from Iranian markets.
