Also known as the Persian shallot, musir (Allium hirtifolium or stipitatum) is like a cross between elephant garlic and regular shallots. They grow wild in the foothills of the Zagros mountains. Musir has a deliciously unique taste, especially when mixed with yogurt. Dried musir is available in Iranian markets. It is best soaked overnight, then drained, rinsed with cold water, and patted dry before chopping finely.
