Pumpkins and acorn and butternut squashes can all be prepared in the same way. With a heavy cleaver, slice the pumpkin or squash crosswise into 2 in (5 cm) rings. Remove the seeds with a spoon and discard. Use the cleaver to peel each section of pumpkin, then cut each section into 1 in (2.5 cm) cubes. Rinse and drain the cubes, and pat dry.
