I keep 5 different types of vinegar in my kitchen: a red wine vinegar (sherry vinegar); rice vinegar; balsamic vinegar, including a white balsamic vinegar (it adds a great taste to salad dressings without darkening them); and an apple cider vinegar (I add splashes of it to the water for washing fresh herbs and salads, especially from the garden or farmers’ market).
