Fresh pears with ginger is a sublime combination. Find fresh juicy pears, peel and core them, and chop into small pieces. Grate about 1 teaspoon/5 g fresh ginger for each pear you use. Combine the two ingredients, cover, and let sit for 15 minutes before making the gnocchi. If you do not have fresh ginger, use ⅓ to ½ teaspoon/2 to 3 g of ground ginger per pear. Either way, add a small amount of ground ginger to the dressing.
