While it is wonderful as is, polenta also benefits from certain dressings and sauces. Whichever one you use, the procedure is the same. After pouring soft polenta into an individual plate or bowl for serving, make a hollow in the middle using the bottom of a spoon or ladle. Then add the sauce or dressing. You may either stir it into the polenta (a good idea if it has cheese in it), or just let the sauce sit and then use your spoon to move polenta into it. Melted butter by itself, or with a spice such as cinnamon, ginger, paprika, or anise, can work. Butter and sugar is a lovely treat at the end of a meal, especially for children.
