You do not need a large bowl of water. Instead, place your bowl in the freezer until just before it is needed. Peel the figs, cut them in half, and toss them into the bowl. Use 2 tablespoons/30 ml lemon juice. The alcohol of choice is cherry distillate. When you have added the juice and distillate, also add 1 tablespoon/15 g sugar, stir thoroughly, and let macerate for 10 minutes before adding the syrup. Crush the figs gently with the egg beater or a wooden spoon before adding the syrup. Continue according to the recipe, using either an egg beater or a spoon to crush and stir the fruit.
