Because prunes are dried, this procedure is a bit different. Cut the prunes into chunks, discarding any pits. You need only 1 tablespoon/15 ml lemon juice for the water. Soak the prunes for 15 minutes before tossing out the water. The alcohol of choice is a plum distillate or Slivovitz. You might choose to use 3 tablespoons/45 ml instead of the usual 2. Depending on the size of the prune chunks you make, you should use either an egg beater or a wooden spoon. Follow the traditional procedure to make the sorbet.
