Testing Boiled Sugar Syrup by Hand

The easiest and most reliable way to check the temperature of boiled sugar syrup is to use a candy or sugar thermometer. However, professionals often test by hand, particularly for small amounts of syrup for which a thermometer may not be accurate. Boiling sugar syrup can be tested by hand until the hard-crack stage is reached. Beyond this point, at the caramel stage, a hand test would be too dangerous.
  1. Dip your finger and thumb into a bowl of iced water. Quickly dip them in the boiling syrup to catch a small ball, and immediately in the iced water again. Knead the syrup between your fingers to test the consistency. ALTERNATIVELY, dip a teaspoon into the boiling syrup, take a little of the syrup on the spoon and dip it in the iced water. Knead as above.
