Molasses is a thick, dark brown syrup and is a by-product from the sugar refining process. For use in this book, I used unsulphured molasses which is lighter in color and sweeter than darker or blackstrap molasses which contain less sugar and are slightly bitter.
To measure molasses, use measuring spoons for small amounts or a liquid measuring cup with spout for larger amounts.
