Buttermilk was originally the liquid left over from the butter churning process. Today, store bought buttermilk is thick cultured low-fat milk that has a tangy flavor to it. Buttermilk not only adds flavor but helps tenderize foods. If you can’t find buttermilk, sour milk can be substituted.

To make sour milk: In a 1 cup measuring cup, place 1 Tablespoon of fresh lemon juice or vinegar. Pour regular milk up to the 1 cup line then stir. Allow mixture to sit for 5 minutes before using. Makes 1 cup.
