Yes, it looks cool to have a piece of blown sugar shaped like a pear, maybe with some mousse inside. But it’s like eating tasteless glass. Yum! Presentation does matter, but if it doesn’t taste delicious then what the fuck is it doing on your plate? If you want pulled sugar, go buy a candy cane and suck on it.
