Yuzu is a small, Japanese citrus with intense acidity and bitter notes, somewhere between a lime and a grapefruit. It’s also the love of my pastry life. It can easily be found online or in Asian specialty stores, and you can use lemon juice if you can’t find it. But remember: there’s nothing quite like the superior taste of yuzu.
