These near-transparent spring roll skins are instrumental in many of my deep-fried recipes because they retain fantastic structure without losing that hugely satisfying, paper-thin crispy quality. They dry out very fast, so always cover them with a lightly damp towel. Seal these skins with egg wash or water after wrapping.
