Gelatin sheets are separated by grade and ability to set a gel. I use Silver Strength sheet gelatin, 160 bloom, and each sheet should weigh 2.5 grams. For recipes in this book, weigh your sheets in dry leaf form first then give it a good soak in water until it softens up. Finally, squeeze the excess water out before use.
