Goma Paste

Goma paste is black or white sesame paste, a common ingredient in Asian cuisine. I use a brand called Goma Atari from Japan. It is ultra-pasteurized, super-smooth and has outstanding depth of flavor. I use it often in mousses and pastry cream.
