What Is Ribbon Stage?

When batter is at the ribbon stage, it incorporates air and ensures the suspension of the dissolved sugar in the eggs. This makes for a more tender crumb in the final cake. When you lift your whisk, batter will trail like a ribbon. The amount of time the ribbon holds determines the stability of the suspension. We recommend three to five seconds.
