Known as kuri in Japanese, chestnuts are a favourite autumn food in Japan. Chestnuts have prickly husks and a double-layered shell protecting soft yellow flesh. Normally the prickly husk would have already been removed when you find them in the market. A good test to eliminate spoiled chestnuts is to float them. Those that sink to the bottom are the good ones.
