There are many different varieties of eggplant, but the Japanese eggplant or nasu is usually sweeter than the others. Japanese eggplant has deep purple-coloured skin and firm flesh and is usually about 10–15-cm (4 –6-in) long. Choose Japanese eggplant with a firm and shiny appearance and no obvious blemishes.
