Japanese sweet potato or satsumaimo season is in autumn. These tuberous roots have purplish red skin and whitish yellow flesh. Although largely similar to other types of sweet potato, Japanese sweet potatoes are sweeter and have a softer texture. Good quality Japanese sweet potatoes do not discolour easily when cut.
