Nagaimo and yamatoimo are different types of mountain yam tubers belonging to the Dioscorea family. Both nagaimo and yamatoimo are cylindrical in shape except that yamatoimo is fan-shaped at one end. Nagaimo is crunchy and more watery while yamatoimo has a dense and powdery texture. When selecting either yam, choose those that have a smooth, flawless surface without any bruises. To store, wrap in wet paper towels and place in a plastic bag in the refrigerator. Those with sensitive skin may experience itchiness when handling these yams. Wear gloves to avoid this and soothe any affected areas with vinegar or lemon juice.
