Yuzu is a citrus fruit with a delightful fragrance. It is usually available during late autumn and winter. Yuzu is rarely eaten as a fruit. Its rind is grated or sliced to garnish dishes and its juice is commonly used for seasoning. Lemon or lime peel can be used as substitutes if yuzu is not available.
