Available from some greengrocers when they are in season in spring. To prepare, wear thick rubber gloves to prevent stinging (the itchiness can last for days), and pick over and discard the coarse, tough base of the leaves. Cooking removes the stinging element. If unavailable, use spinach, silverbeet or another leafy green.
