The most humane (and easiest) method to kill any crustacean is to chill it in the freezer for 30–60 minutes until it becomes insensible (but not long enough to freeze it), then kill it promptly by splitting it in half or dropping it into a saucepan of rapidly boiling water. (See rspca.org.au for more details.) I put the yabbies into a bowl and wrap the bowl in a towel so they don’t climb out and walk all over the freezer.
