Buy hulled raw seeds in bulk from a natural foods store; store them in airtight containers in a cool, dark, and dry place. They will be fresher and less expensive than the tiny jars on the spice rack at your grocer. To roast benne, place them on a baking sheet in a medium (350°) oven or in a frying pan on top of the stove over medium heat. Stir often until all of the seeds are evenly roasted a golden brown, about 15 minutes.
