Now that fresh herbs are so widely available in greengrocers and supermarkets (that is if you don’t grow your own), I use them almost all of the time, and the quantities stated in this book are for the fresh variety. Dried herbs taste like old lawn cuttings – I think that the only herbs that dry satisfactorily are the woody ones, thyme and rosemary. The fleshy ones don’t dry at all well.
