The only kind of pastry I make is shortcrust. I once made puff pastry, following the recipe to the letter, but it was a disaster and I’ve never tried again because I can buy extremely good ready-made puff pastry fresh (I use Bell’s, made in Scotland). It is also possible to buy ready-rolled puff pastry.
I don’t even think about making filo pastry because the bought kind is so good. The Jus Rol version comes in smaller sheets than other makes and is easier to handle, but my favourite brand is King James.
