Although I would rather use home-made stock than bought cubes, I would be a liar if I said that I don’t keep stock cubes. Of course I do – but I buy those that contain no additives. The chief additive to avoid is monosodium glutamate, which lends an identical taste to the different kinds of stock cube, whatever its flavour is meant to be, and gives the stock a syrupy texture. You can find additive-free stock cubes in health food shops and delicatessens, and some supermarkets.
